This is one of my favourite ways to use leftover rice.
Creamy Coconut Rice Pudding
2 cups leftover white rice
1 cup coconut milk
1 cup whole milk
1/4 cup to 1/2 cup sugar, to taste
pinch of salt
1 tsp vanilla extract
toasted coconut (optional)
1. Combine cooked rice, milk, sugar and salt in a saucepan.
2. Bring to a boil, then lower the heat to a simmer.
3. Cook until it reaches the consistency you like (approximately 20 – 30 minutes).
4. Stir in vanilla extract.
5. Serve warm or cold, topped with toasted coconut or your favourite fruit.
Makes approximately 4 – 6 servings.
