This strawberry chia seed jam is delicious and so easy to make, I hesitate to call it a recipe. Chia seed jam does not include any sugar, unlike traditional jams, and is thickened with nutritious chia seeds instead of pectin.
Tiny chia seeds are packed full of healthy nutrients and are a source of antioxidants, fibre, healthy fats, vitamins and minerals.
1 cup frozen strawberries
1 tbsp chia seeds
1 tbsp water (if needed)
Thaw the strawberries in a bowl.
Mash the strawberries with a fork to your desired consistency, or blend in a food processor if you want more of a jelly consistency.
Add the water, if needed, to thin the consistency of the jam.
Stir in the chia seeds.
Place into a glass jar and leave to set for 30 minutes in the fridge.
I don’t add any sweetener to this jam, as the strawberries taste sweet enough to me. If you want to add sweetener, you could use honey, maple syrup or stevia. As there are no preservatives, this jam should be stored in the fridge for a few days or in the freezer for a couple of months.
I love to use this as a topping for pancakes and crackers or stirred into yogurt or oatmeal.
