Delicious roast pork loin with apple topping. Perfect for Sunday dinner.
Ingredients:
Rub
- 1/2 tsp sugar
- 2 tbsp flour
- 1 tsp salt
- 1 tsp dry mustard
- 1 tsp caraway seeds
- 1/4 tsp black pepper
- 1/4 tsp ground sage
- 4 – 5lb pork loin roast
Topping
- 1 1/2 cups applesauce
- 1/2 cup brown sugar
- 1/4 tsp cinnamon
- 1/4 tsp mace
- 1/4 tsp salt
Directions:
1. Preheat oven to 325F.
2. Mix rub ingredients together in a small bowl.
3. Rub mixture over surface of pork.
4. Place pork fat side up on a baking rack in roasting pan and cook for 1 1/2 hours.
5. Mix topping ingredients in a small bowl.
6. Spread topping ingredients over roast.
7. Bake 1 hour longer, until juices run clear and the temperature of the pork reaches 150F.
8. Cover with foil and let rest for 10 – 15 minutes. Slice and serve.
