31 Days of Autumn {Day 28}: Apple Pie

November 4, 2013 by Debbie 6 Comments

Hello! I am back at last. My family and I have been ill over the last week with flu. We are finally on the mend and I am going to finish my 31 Days of Autumn series this week.

Here’s my recipe for a delicious apple pie.

Homemade apple pie

Ingredients:

Pastry

  • 2/3 cup cold unsalted butter
  • 6 tbsp vegetable shortening
  • 2 2/3 cups all purpose flour
  • 2 tablespoons caster sugar
  • 1/2 tsp salt
  • 8 tbsp ice water

Filling

  • 6 apples (approximately 2 1/2 pounds)
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, melted
  • 1/4 cup golden yellow sugar
  • 1 tsp ground cinnamon

Egg wash (one egg beaten with a little bit of water or milk)

Directions:

1. In a large bowl, combine the flour, sugar and salt.

2. Cut the butter and shortening into 1/2″ pieces.

3. Using a pastry blender or your fingers, cut in the fat until the mixture forms large, coarse crumbs.

4. Drizzle enough ice water over the mixture until the dough is moist and beings to come together into a ball.

5. Transfer the dough to your counter top. Divide the dough into half and form each half into a 6″ disc.

6. Wrap each piece tightly in plastic wrap and refrigerate until well chilled, about one hour.

7. Peel, core and slice the apples 1/4″ thick.

8. In a large bowl, combine the apples, lemon juice, butter, sugar and cinnamon. Stir until blended.

9. Preheat the oven to 400F.

10. Roll out one of the pastry discs to line the bottom of a 9″ pie pan.

11. Spoon the apple mixture into the crust.

12. Roll out the second pastry disc to cover the top of the pie.

13. Position the top crust over the filling. Trim and flute the edges.

14. Brush the top of the pie with egg wash. Cut steam vents in the top crust.

15. Bake the pie for 15 minutes.

16. Reduce the oven temperature to 350F. Continue baking until the top crust is lightly browned and the apples are tender (when tested with a toothpick through the steam vent), approximately 45 – 60 minutes.

17. Transfer to a wire rack and let cool.

Enjoy!

Sorry to hear you’ve been sick. Your pie is beautiful! Hope you continue to get better. Maybe now you have it out of the way and can be healthy all winter.
