This is yesterday’s 31 Days of Autumn post. My family has been struck with illness this weekend. I apologize and thank you for your patience.
Caramel Corn
Ingredients:
- 8 cups popped popcorn
- 3/4 cup packed brown sugar
- 1/3 cup butter
- 3 tbsp corn syrup
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp vanilla
Directions:
1. Preheat oven to 325F.
2. In small saucepan combine sugar, butter, corn syrup and salt over high heat.
3. Bring to a boil. Boil at a slow boil for 4 minutes without stirring.
4. Remove from heat and stir in baking soda and vanilla.
5. In a large mixing bowl, pour the caramel over the popcorn and stir to coat evenly.
6. Transfer, in a single layer, to a large baking sheet lined with parchment paper.
7. Bake for 10 – 15 minutes.
8. Remove from the oven and let cool before breaking into pieces.
