These easy no-bake almond granola bars are perfect for an after-school snack, to put in the kids’ lunches or to take while traveling!

No-Bake Almond Granola Bars
Delicious and easy to make and customize. Additional mix-in ingredients could be chopped nuts, raisins, hemp hearts or sunflower seeds. Perfect for a quick snack.
Ingredients
- 2 1/2 cups puffed rice cereal
- 1 3/4 cups quick oats
- 1/4 cup wheat germ
- 1/4 cup shredded coconut
- 1/4 cup dried cranberries
- 1/2 cup honey
- 1/2 cup brown sugar
- 1/4 tsp salt
- 2/3 cup almond butter
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Directions
Combine rice cereal, oats, wheat germ, coconut and cranberries in a large bowl.
In a saucepan, melt the honey, brown sugar and salt together over medium-low heat. Allow to boil for 30 – 60 seconds.
Remove from the heat and stir in the almond butter and vanilla extract until smooth.
Drizzle over the dry ingredients and mix well.
Let cool for five minutes before adding in the chocolate chips.
Press into a greased 9″ x 13″ pan and let cool before cutting into bars.
Enjoy!

These look amazing! I’ve had to go gluten free so the wheat germ would be out but should I replace it with something or just not include it? I was thinking hemp hearts maybe?

I like the idea of using almond butter, don’t care to much for peanut butter in recipies, so would be a great alternative!
