These are our favourite banana muffins at the moment. They are delicious and moist.

Ingredients
- 3 large bananas
- 1/2 cup white sugar
- 1 egg
- 1/3 cup canola oil
- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Directions
Preheat oven to 350F and line your muffin tin with 12 paper cups.
In a large mixing bowl, mash the bananas with a fork. Add the sugar, egg and oil and mix together with a wooden spoon.
Add the flour, baking soda, baking powder and salt. Gently mix the dry ingredients into the wet ingredients just until incorporated.
Spoon the batter into the paper cups. Bake for 23 – 25 minutes until a toothpick inserted into the centre comes out clean.
Let the muffins cool in the tin for five minutes before placing them on a rack to cool completely.
