Easy Banana Bread

You will love my recipe for easy banana bread.  This is a good, basic recipe to keep on hand when you need a delicious afternoon snack.

Easy Banana Bread Recipe

Ingredients

  • 1/2 cup unsalted butter, melted and cooled
  • 1 3/4 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 large ripe bananas
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract

Directions

Preheat the oven to 350F and place oven rack in the middle position. Butter and flour (or use a non-stick spray or liner) the bottom and sides of a 9 x 5 x 3 inch loaf pan.

Melt the butter in a small saucepan over a gentle heat. Set to one side to cool.

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.

Dry Ingredients

In a medium sized bowl, mash the bananas.

Add the eggs, melted butter and vanilla extract to the bananas and combine.

Wet ingredients

With a wooden spoon, fold the wet ingredients into the dry ingredients until just combined and the batter is still chunky.

Be careful not to over mix the batter, otherwise you will have tough bread.

Pour batter into the prepared loaf pan and bake for approximately 55 minutes until the bread is golden brown and a toothpick inserted in the centre comes out clean.

Leave in the pan to cool for about ten minutes. Then gently remove the banana bread from the pan and place on a wire rack to cool.
