January 29, 2021 by Debbie Leave a Comment

My simple no bean beef chili recipe is perfect for cold winter nights. It’s delicious and ideal for a cozy family dinner.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 1 1/2 tsp chili powder
  • 1 tsp paprika
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1 red pepper, finely chopped
  • 1 green pepper, finely chopped
  • 1 can ( 398 ml / 13.5 oz) crushed tomatoes
  • 1 1/2 cups beef stock

Directions

The first step is to choose a large pot to cook the chili in. I use my Le Creuset Dutch oven which has a 5 1/2 quart capacity.

Pot for cooking chili

Add the ground beef and cook over medium heat until the meat is fully browned.

Cooking ground beef for chili

Remove the ground beef from the pot with a slotted spoon and transfer to another bowl.

Add the onions and minced garlic to the pot and cook over medium low heat for a few minutes until the onions are translucent.

Next, add the spices and salt to the pot. Reduce the heat to low and cook for another minute.

Cooking spices

Add the bell peppers.

Next add the broth and tomatoes to the pot.

Adding tomatoes and broth

Put the ground beef back in the pot. Turn the heat up and bring to a boil. Once it reaches a boil, turn the heat down to low and simmer the chili for about an hour.

Chili simmering in pot

Add more liquid if required while simmering. Taste to see if any more spices are required.

Chili in bowl with bread

Serve over rice or with bread.

Enjoy!
